Masala Bhurji Pav

4 eggs

½ teaspoon of salt

2 butter spoons

½ cup chopped onion

1 green chili chopped

½ teaspoon minced ginger

½ teaspoon minced garlic

½ teaspoon of turmeric

½ tablespoon pav bhaji masala

½ cup of chopped tomatoes

1 tablespoon fresh coriander

pav masala

pave of 6 pieces

2 tablespoons pav bhaji masala butter

handful of coriander

1. In an empty bowl, crack open the eggs and beat well to incorporate air into the egg, add seasoning and beat well. This will help incorporate air and soften the bhurji.

two. Gently melt the butter in a skillet.

3. Once the butter is melted, add the onions, along with some chopped green chilies. Add very little ginger and garlic.

Four. Give this mixture a quick stir, while cooking the onions but now brown them.

5. Add the turmeric while the onions cook along with the special pav bhaji masala.

6. Mix well to cook a little and then add the tomatoes. Cook all this over medium heat so that the masalas do not burn.

7. Once the onions and tomatoes are soft but holding their shape, slowly add the beaten eggs into the pan and reduce the heat to a simmer.

8. Stir the eggs continuously in the pan and little by little the bhurji will come together.

9. Once the egg bhurji is done, turn off the gas and garnish with some chopped coriander. The masala bhurji is now ready for plating.

10 Slice open the pav from the center and butter the pav and cook well to crisp inside and keep turning for even color.

eleven Once the pav is done, sprinkle some pav bhaji masala along with chopped coriander over the pav and toast over the pan again.

12 Now you can serve them with the egg masala bhurji.
