KOCHI: Look anywhere in the city, you’re sure to find an outlet selling shawarma. However, most outlets have made some adjustments to the recipes to make the shawarma suit the Malayali palate. However, Wah Turk, the recently opened food store located at Kumaranasan Nagar in Kadavanthra, offers shawarma made close to the original Turkish style, using authentic ingredients.

Started by Suhail Shajahan, a chef and food consultant for the last four years, this company is only nine months old. “Although there are many food outlets in the city that sell shawarma, authenticity is often compromised. Wah Turk focuses on authentic Turkish-style shawarma. In addition, we have chosen a healthy bread for customers. It’s not the kuboos, it’s the Saj bread,” shares Suhail.

If you crave some shawarma with fresh flavors, then ‘Signature Chicken Shawarma’, their flagship product, is the way to go. It’s made with Saj bread, a thick version of rumali roti. With the first bite, you can embark on a gastronomic journey. Hot, crispy, juicy chicken pieces, lettuce, fresh French fries, and four freshly prepared homemade sauces make this a special bite.

The meat is marinated with masalas and special Turkish herbs. Toum, an Arabic-style garlic mayonnaise, is used as a sauce in shawarma. Mainly lettuce, chicken pieces and French fries are used to prepare the shawarma filling.

“However, we also customize the filling according to the needs of the client. Sometimes cucumbers and small tomatoes are also used,” says Suhail. In addition to ‘signature chicken shawarma’, other varieties include ‘signature chicken with cheddar’, ‘whole meat with cheese’, etc.

Whole meat chicken shawarma comes with huge fillings of juicy, crispy chicken pieces. Even authentic fried falafel patties made with chickpeas, herbs, spices, onions, and dough, are also served at the store. Standalone side dish is also served inside saj bread pockets with diced vegetables like lettuce, onions.

The establishment recently won the award for best shawarma at a function held at the Kochi Maritime Convention Center by Metro Food and Brands Excellence Award and Kerala Travel Mart.
Grilled delicacies in chicken and beef versions and unique shawarma burgers will be the latest additions to its second location, launching soon.

Ingredients:

  • 10-12 jackfruit seeds
  • 2 carrots
  • 2 drumsticks
  • 2 raw bananas
  • 1/2 cup sliced ​​green mango
  • ½ teaspoon of turmeric powder
  • ½ teaspoon Kashmiri chili powder
  • ¼ cup curd
  • 1 tablespoon coconut oil
  • curry leaves
  • Salt to taste

  • ½ teaspoon cumin seeds
  • 5- 6 green chilies
  • ½ cup grated coconut
  • 4 shallots

Preparation method
Clean and julienne all the vegetables evenly. Clean the seeds of the jack fruit and cut them. Marinate the vegetables and jackfruit seeds with turmeric powder, Kashmiri chili powder, salt and ½ teaspoon coconut oil. Grind listed ingredients to coarse grind. Once cooked, add the ground coconut mixture and add the curd over low heat. Garnish with 1 tablespoon coconut oil and curry leaves and turn off the heat.
