When it comes to a healthy snack, veggie patties are considered to be at the top of the list. They are delicious, flavorful, and filled with healthy vegetables like green beans, peas, carrots, tomatoes, and potatoes.

Veggie patties are a nutritious vegan snack that contains lots of protein, vitamins and minerals and is very low in fat. You can pair the patties with an afternoon tea or with hummus or you can use them as a filling for burgers.

Ingredients

- Half a cup of potatoes, finely chopped.
- A quarter cup of carrots, finely chopped.
- A quarter cup of beans, finely chopped.
- A quarter cup of cabbage, finely chopped.
- A quarter cup of onions, finely chopped.
- A quarter cup and a tablespoon of maida, separately.
- A quarter tablespoon of chili powder.
- A quarter teaspoon of cumin seeds.
- 1-2 dried red chillies.
- A pinch of turmeric.
- A small amount of breadcrumbs to roll.
- Salt to taste.
- Oil for sautéing and frying.
How to prepare

- In a skillet, heat the oil.
- Crispy cumin seeds and dried red chillies.
- Add the onions and sauté until golden brown.
- Now add all the vegetables and cook for about 10 minutes or until soft.
- Add salt, turmeric, chili powder and a tablespoon of maida and mix well.
- Sauté them for a minute or two over medium heat.
- Turn off the heat and let the mixture cool for a while.
- Once done, mash them with a potato masher and set them aside.
- Divide them into 4-5 equal portions.
- Shape each of them like an oval.
- Now dip each patty first in maida and then brush the breadcrumbs evenly on all sides.
- Now heat the oil for frying and fry them all until golden brown.
- Serve hot with ketchup or chutney.
Instructions
- You can fill the empanadas with the vegetables of your choice. It is best to fill it with a seasonal vegetable.
