Serves 2

Ingredients

  • 1 tablespoon olive oil
  • 1 lemon in juice,
  • 1 garlic clove crushed
  • 1 teaspoon of oregano
  • pinch of cinnamon
  • 1/4 teaspoon paprika
  • 1 chopped chicken breast

Method

  1. Combine the lemon juice, oil, garlic, oregano, cinnamon and paprika in a wok, add the chopped chicken and refrigerate for 1 hour to marinate.
  2. Thread the chicken pieces onto skewers and cook for 8 to 10 minutes.
  3. Enjoy with a salad

Versatile Ground Beef Standard Recipe

for 4 people

Ingredients

  • 400 grams of minced meat of your choice
  • 1/2 cup chopped broccoli
  • 1/2 cup of chopped bell pepper
  • 1/2 cup chopped carrot
  • 1/2 cup of water
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 2 cloves of garlic
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method

  1. Add the oil, chopped onion, and garlic to a saucepan. Cook until transparent. Add the minced meat and cook until browned. Add the herbs, chopped vegetables, and water and cook for an additional 10 minutes.
  2. Season with salt and pepper and garnish with fresh herbs.

Note: You can use 1.5 cups of frozen vegetables for this recipe.

Quick and easy pizza

Ingredients

  • 1 tortilla
  • 1 teaspoon olive oil
  • 1 garlic clove crushed
  • Salt and pepper to your liking
  • 3 tablespoons tomato paste/sauce
  • 1 sliced ​​cooked chicken breast
  • 1/2 bell pepper chopped
  • 2 chopped spring onions
  • 1/2 cup grated mozzarella cheese
  • 1 teaspoon dried parsley

Method

  1. Preheat the oven to 200°c. Place the tortilla on a baking sheet. Add the garlic, salt and pepper. Brush with olive oil. Bake for about 4 minutes.
  2. Remove the tortilla then add the ingredients starting with the tomato sauce, then the chicken, vegetables, and cheese.
  3. Return to oven for another 5 minutes or until cheese is melted.

Note: You can use a store-bought rotisserie chicken or cook your own chicken breast.

Easy beef stir fry

for 4 people

Ingredients

  • 2 tablespoons light olive oil
  • 400 grams of beef cut into thin strips
  • 1 1/2 cups chopped broccoli
  • 1 chopped bell pepper
  • 2 cloves of garlic
  • 2 carrots, thinly sliced
  • 1 minced spring onion
  • 2 tablespoons tamari (or soy sauce)
  • 2 tablespoons of sesame seeds
  • Garnish with fresh coriander

Method

  1. Heat the vegetable oil in a skillet or wok if you have one and cook the meat until browned, this should take around 5 minutes.
  2. Remove the meat, then add the vegetables to the pan or wok, including the garlic, and cook for 2 to 3 minutes.
  3. Add the meat again, then the soybeans and sesame seeds and cook for a couple more minutes.
  4. Serve with fresh cilantro on a bed of rice or cauliflower rice.
